Sweet & Savory Holiday Rice

Ingredients for Rice

2 cups basmati rice
¼ avocado/ olive oil or vegetable oil
3 cups water or vegetable stock
1 spray of SG Liquid Black Pepper

Rinse the rice using a fine-mesh sieve or strainer and cold running water.
Warm the oil in a heavy bottom medium size pot. when oil is warm not hot add the rice and fry for 5 mins. Stirring with wooden spoon/ this will coat each grain with oil to avoid the rice grain from sticking to each other.
Pour water into the pot, add salt and pepper, cover with a lid, and bring to a boil on medium heat.
Once boiled Immediately turn down to a low simmer and let simmer, covered and undisturbed, for 20 minutes.
Turn off heat and let steam for 5 to 10 more minutes.
Uncover, fluff with a fork .

Ingredients for dried fruit topping

1 Cup golden raisins
1 cup prunes
1 cup apricots
2 large (onions red or yellow )
½ cup slivered almonds
4-6 cinnamon sticks
4-5 star anise
1 spray of SG Liquid Cinnamon
Optional for extra sweetness
4 spoons of honey, maple or silan (date honey)

Place all the dried fruit in a big bowl and top with boiling water
Cut the onions into medium thin stripes
Place 3 spoons of avocado or vegetable oil in a large sautéing pan
Once warm add the onion and caramelized until onions are golden brown
Add your choice of honey , cinnamon and star anise and stir for few minutes. Drain the fruit from the water and add to the onions, sautéed and stir on low heat until most liquids have evaporated.
Add almonds and or your favorite nuts (cashew/ walnuts/ hazelnut )

Serve over the basmati rice in a serving platter . enjoy !
