Healthy Spiced Quinoa Stuffing
INGREDIENTS
3 bay leaves
Salt, to taste
2 cups quinoa
1/4 cup olive oil
1 spray of SG Liquid Cinnamon
1 spray of SG Black Pepper
1 spray of SG Liquid Ginger
1 butternut squash, peeled and diced
1 bunches green onions, chopped
1 cup dried apricots, diced
1 cup dried cranberries
1 cup fresh parsley, chopped
1 cup fresh mint, chopped
½ cup chopped pecans
½ red onion chopped
1 lemon peel
DIRECTIONS
1. Boil 4 cups water and season with bay leaves and salt. Add quinoa and return to a boil.
2. Reduce heat, cover, and simmer about 20 minutes, until the quinoa absorbs water. Remove from heat, remove bay leaves, and let cool.
3. Meanwhile, heat 3 tablespoons of oil in a frying pan. Sauté the onion until golden add squash and season with salt cinnamon , black pepper and ginger spray
Until slightly browned.
4. Combine vegetables and quinoa. Drizzle on the remaining 1 tablespoon of oil. Stirring, apricots, cranberries, parsley, pecans and mint. Grate in lemon peel and stuff your turkey or serve on side.
